Making peanut butter cookies from scratch is pretty darn easy. But when you really want something low effort, fast, and with minimal clean-up, try baking cookies in an air fryer!

I’ve been making these easy 3-ingredient peanut butter cookies in the oven forever. Converting them to an airfryer peanut butter cookies recipe was a real gamechanger.

Now, I can bake these cookies in less time than it takes to preheat the oven! They’re perfect for a quick afterschool snack, or anytime you’d like to make something sweet.

I’m making these cookies with Swerve, one of my favorite 1:1 sugar substitutes. While I’m loving that these are no sugar peanut butter cookies, you can use white sugar (granulated) if you prefer. I’ve got some nutrition info on peanut butter cookies variations in the dietitian tips section below.

🥘 Air Fryer Peanut Butter Cookies Ingredients

To make peanut butter cookies in an air fryer, you need the following ingredients:

  • 128 grams peanut butter (about ½ cup)
  • 96 grams granular Swerve (about ½ cup)
  • 1 large egg

I use creamy peanut butter in this recipe, but you can use crunchy peanut butter if you’d prefer. Choose a natural peanut butter that is just peanuts or just peanuts and salt. Added sugar and other added ingredients can change how this recipe turns out.

As with most recipes for baked goods, I recommend weighing ingredients for the best results. If you make cookies regularly, you should consider getting a food scale.

You’ll also want to have a bowl, electric mixer, a cookie scoop, and an air fryer for this recipe. I use a 10-Quart Kalorik Digital Air Fryer Oven.

The Ninja Foodi, Philips, Nuwave, Pampered Chef, Actifry, Instant Pot Vortex, Cosori, Breville, and other air fryers can make cookies. However, cooking times may vary between air fryer brands. Keep a close eye on the food whenever you try a new air fryer recipe to get the timing just right.

🔪 How to Air Fry Peanut Butter Cookies

Begin by putting the peanut butter, Swerve, and egg in a large bowl. Blend using an electric mixer.

Use a cookie scoop to make 8 balls of cookie dough on an air fryer tray or air fryer basket. Next, use a fork to press the cookie dough balls down because they don’t spread. You’ll press each cookie with the fork twice, once horizontally and once vertically.

Don’t use parchment paper under the cookies. Parchment paper can keep the cookies from sinking into the holes of the rack as they bake. However, it makes the cooking time longer and the cookies may dry out before they’re fully cooked.

Having trouble with the cookies sticking to the air fryer basket? Press the dough with the fork BEFORE putting the dough in the air fryer basket. After pressing them into cookie shapes, place each cookie on the air fryer tray.

️⏲️ Keto Peanut Butter Cookies Air Fryer Time and Temperature

How long to cook peanut butter cookies in the air fryer? What temperature to air fry peanut butter cookies? Air fry peanut butter cookies for a total of 5-9 minutes at 350 degrees Fahrenheit (177C). The tray should be in the middle of the air fryer if you have an air fryer oven.

Five minutes air frying time will get you a very soft, dense, and chewier cookie. This is my favorite way to enjoy this recipe. The Swerve stays just a little bit grainy, which I really like.

After a total of 8-9 minutes of air frying time, you get a cookie that’s crispier on the outside and more crumbly. The cookie will have more browning than the 5 minutes cookies.

After 5 minutes (or even 9 minutes) the cookies may not look done right after removing from the air fryer. However, they’ll firm up after they’re cooled.

Let them cool for 1 hour on the air fryer tray, then carefully lift each cookie with a spatula. I like to let them continue to cool on a baking rack for 30 minutes before moving to the fridge. Allow to chill in the fridge (covered with plastic wrap) before enjoying.

🌡️ How to Store Cookies

You can keep air fryer peanut butter cookies in an airtight container in the fridge for up to 3-4 days. These cookies also freeze well. Place parchment paper or freezer paper between the cookies before freezing so they don’t stick together.

In my book, nothing beats cookies and milk! You could also serve peanut butter cookies with ice cream, whipped cream, or spread them with jelly for classic peanut butter and jelly flavor.

It’s important to chill cookie dough before baking for some recipes (like these Kodiak Cake Cookies). That said, I don’t think you need to chill the dough for this cookie recipe. These peanut butter cookies don’t spread much, chilled or not.

You can put frozen cookie dough in the air fryer! Air fry frozen cookie dough balls in a small pan at 325F (163C). The air fryer time will depend on the size of the frozen cookies, but will likely take 10-15 minutes.

💭 Expert Tips from Dietitian Summer Yule

This is a level 3 recipe (weight maintenance and active lifestyles). Cookies are typically a low protein, high fat and carb combo packed with white flour and sugar. Even though this peanut butter cookie recipe is higher protein and free of added sugar, I’d still place it at level three.
In general cookies, even “healthier” keto cookies, are very easy to overeat. Though they’re technically sized to be portion controlled, it’s tough to eat just one or two!
These cookies kind of have the same vibe as spooning peanut butter straight from the jar. If you’re the type of person who does this, you know how hard it can be to stop.
One thing that may help is keeping leftover cookies in the freezer to prevent mindlessly snacking on them all day. (Then again, they’re perfectly good and edible frozen, don’t ask me how I know. Haha)
Using Swerve (or another 1:1 sugar substitute) in this recipe does make a big nutritional impact. One half cup of sugar adds about 386 calories and 100 grams of net carbs to this recipe. Using Swerve instead of sugar saves almost 50 calories and 12.5 grams of net carbs per cookie.
Also, in terms of the dietary recommendations, cutting back on added sugar is a good thing. Most of us in the U.S. are eating way too much added sugar. Using a sugar substitute you like can help you lower calories, lower carbs, and get you closer to the Dietary Guidelines recommendations.
