This recipe is easy enough for a weeknight family dinner, but fancy enough for a holiday main course. You’ve got to love a main dish that fits just about any occasion.
I wasn’t a fan of lamb when I was younger, but experimenting with air fryer lamb recipes has changed my opinion. This french rack lamb is everything you want lamb to be- beautifully browned outside, tender and flavorful inside, and perfectly seasoned.
But enough just talking about this lamb rack air fryer recipe- let’s make it!
🔪 How to Air Fry Rack of Lamb
Here are the step-by-step instructions for how to make rack of lamb in air fryer:
- Allow the lamb to rest at room temperature for 30 minutes before you begin the recipe. This will help it cook more evenly.
- Rub both sides of the meat with olive oil.
- Mix the rosemary, thyme, garlic powder, salt, and black pepper together. Sprinkle the seasoning on both sides of the lamb.
- Place lamb rack in the air fryer fat side up. Air fry for 8 minutes at 375F (190C). Then flip the lamb and air fry at 375F (190C) for 7 minutes more.
- Use a meat thermometer to check the middle of the thickest part of the lamb. Medium done is 130-135F, which is how I prefer my lamb. Add additional cooking time if needed. (The safe minimum internal temperature for lamb is 145F (63C), more on this below.)
- After air frying, allow the lamb to rest for 10 minutes. Tent it in foil to keep the meat warm. This rest period allows the juices to redistribute throughout the meat.
- To serve, slice between the ribs and serve your lamb lollipops with mint sauce or mint jelly (if desired).
🥘 Air Fryer Rack of Lamb Ingredients
Here’s what you need to make these air fryer lamb ribs:
- 16 oz frenched lamb rack
- 1 tablespoon olive oil
- 1 teaspoon dried rosemary
- ½ teaspoon dried thyme
- ½ teaspoon garlic powder
- Salt and pepper, to taste
I buy rack of lamb at Thrive Market. You may also be able to find frenched rack of lamb at Costco. If you make Costco lamb rack in the air fryer, you may need to split the lamb into smaller pieces prior to cooking. Amazon carries lamb rib rack here.
I recommend cap off frenched lamb rack for this recipe. “Cap off” means the thick layer of fat was removed from the top of the lamb rack. Frenched means that some of the fat and meat was removed, exposing some bone.
Cap off lamb has a shorter cooking time, since we don’t need to wait for the fat to cook down. Frenched lamb allows for a nicer presentation, as you can cut the lamb between the ribs to make lamb lollipop chops.
If the lamb rack you purchased has a fat cap, you will need to trim that off before starting this recipe. Here’s a video that shows you how to trim a rack of lamb. If your lamb has silverskin attached, you will also want to remove that prior to seasoning and cooking.
I developed this recipe in a small air fryer basket (Okaysou brand). You can make Ninja air fryer rack of lamb, or make it in a Philips, Kalorik, Nuwave, Pampered Chef, Actifry, Instant Pot Vortex, Cosori, Cuisinart, Breville, or another air fryer instead. If you’re using a large air fryer oven, you will likely have a longer cooking time.
⏲️ Rack of Lamb Air Fryer Cooking Time
How long to cook lamb rack in air fryer? What is the air fryer rack of lamb temperature? Air fry lamb rack for a total of 15-17 minutes at 375 degrees Fahrenheit (190C).
For more even cooking, don’t forget to flip the lamb rack over halfway through cooking time. After air frying, check the lamb with a meat thermometer to ensure it has reached the right temperature.
❓ Can you eat lamb medium rare?
If you are comfortable eating steak medium-rare, you can also eat lamb medium-rare. According to the USDA, raw lamb cuts should be cooked to a minimum internal temp of 145F (63C). After cooking, lamb should rest for at least 3 minutes before slicing and serving.
Lamb cooked to 145F (63C) is medium-well done (though some sources call it medium). Here is a guide to lamb doneness levels (source):
- Rare: 115 to 120°F
- Medium-rare: 120 to 125°F
- Medium: 130 to 135°F
- Medium-well: 140 to 145°F
- Well-done: 150 to 155°F
Lamb will continue to cook for a few minutes as it rests, after removing it from the air fryer. Thus, lamb cooked to 145F (63C) could end up well-done, which is overcooked IMHO. I prefer to remove lamb from the heat a little before it reaches 145F (though you’re not technically supposed to do that).
🌡️ How to Reheat Rack of Lamb in Air Fryer
Reheat lamb rack in an air fryer at 350F (177C) for 3-5 minutes. That said, it’s best to enjoy lamb rack cooked fresh. If necessary, leftover lamb rack can be kept in a covered container in the fridge for up to 3-4 days.
Another way to reheat lamb rack is in the microwave on high for 1-2 minutes. Cooked lamb rack also freezes well. Store it in a freezer bag with the air pressed out.

You can make air fryer frozen lamb rack, but the results will not be as good as fresh. Depending on your air fryer, you will need to add 5-6 minutes to the total cooking time.
Can you make air fryer rack of lamb without rosemary?
Yes, you can skip the rosemary if you don’t like it, and use your favorite dried herbs instead. Parsley, basil, oregano, and sage are some examples of herbs that are nice with lamb.
What’s a good rack of lamb marinade recipe?

Can you eat lamb rack pink?
Lamb that is pink may or may not be safely cooked. Color is not a good indicator of doneness for lamb, the internal temperature is. The minimum safe internal temperature for lamb rack is 145F (63C), regardless of whether there is still some pink inside.
How to make lamb rack on the grill?
Preheat the grill to medium heat. Season the lamb and place on the grill with the ribs away from the direct heat. Grill lamb rack for 20-30 minutes, or until desired doneness is achieved (as indicated with a meat thermometer). Let lamb rest for 10 minutes before serving.
How to make oven baked lamb rack?
Preheat oven to 350F (177C). Season the lamb and place in a roasting pan. Bake the lamb (uncovered) for 25-35 minutes, or until desired doneness is achieved (using a meat thermometer). Tent lamb in foil and let it rest 10 minutes before slicing and serving.
