The oats and egg in this recipe aren’t just here for kicks—they’re your secret weapons for perfectly bound patties! Want to keep things gluten-free? Just be sure your oats are labeled certified gluten-free.
No need to reach for the cooking spray either. Ground pork has plenty of fat on its own, which means your patties won’t stick to the air fryer basket—promise!
You’ll also need an air fryer (any kind works—yes, even your Ninja Foodi) and a meat thermometer to make sure everything’s cooked safely.
💡 Pro Tip: Air fryers can be a little quirky, so keep a close eye the first time you make these. Depending on your model, you might need to tweak the cook time just a bit.
➕ How to Cook Sausage Meat in the Air Fryer
Ready to whip up your own juicy homemade sausage patties? Here’s how:
Mix all of the sausage ingredients together using clean hands. Once it’s fully combined, divide the mixture into four equal portions and shape them into patties. Each patty should be about 3½ inches (8.9cm) in diameter and ½-inch thick (1.3cm).
Preheat your air fryer to 375°F (190°C) for 5 minutes.
Carefully place the sausage patties into the hot air fryer basket in a single layer, making sure they’re not touching. (If you’re using an air fryer oven, use the top rack closest to the heating element.)
Got a smaller air fryer? No worries—just cook them in batches!
Air fry for 10–12 minutes total at 375°F (190°C). Start with 7 minutes, then flip and cook for another 3–5 minutes.
Use a meat thermometer to make sure your patties hit at least 160°F (71°C) internally. If they haven’t, pop them back in for a bit longer.
Stovetop Directions
Prefer the stovetop? No problem!
Heat a cast iron skillet over medium heat.
Place the patties in a single layer with some space between them so they don’t stick.
Brown them for about 4–5 minutes per side. Press down slightly with a spatula when flipping to help them cook evenly.
Check that they’ve reached 160°F (71°C) internally.
Leftover Ground Sausage Recipes and Storage
Leftover air fryer sausage patties will keep in the fridge for 3–4 days. Try crumbling them up and using them in one of these recipes:
To reheat:
- Preheat the air fryer to 350°F (177°C) for 5 minutes.
- Add the patties in a single layer and heat for 3–5 minutes until warmed through.
- Make sure they reach 165°F (74°C) inside for food safety!

💭 Expert Tips from Dietitian Summer Yule
This is a level 2 recipe (transition or weight maintenance). When you picture a healthy breakfast, does sausage come to mind? It might surprise you, but I consider these homemade air fryer sausage patties to be a nutritious option—especially when served with eggs and fruit. Animal-based foods like this are rich in high-quality protein, vitamin B12, and highly bioavailable minerals like iron and zinc. And unlike store-bought sausage (which often falls into the ultra-processed category), this homemade version puts you in control of the ingredients. No weird fillers or mystery seasonings—just real food. Concerned about fat content? Air frying helps! A good amount of fat drips off during cooking. You can discard it… or save it like bacon grease. (Hint: it’s amazing for roasting veggies.) Nutrition information is for one serving.
