So, let’s talk about how to make chocolate dipped pineapple! Here’s what you need:

  • Pineapple
  • Chocolate
  • Coconut oil (canola oil or another oil may also be used)

I made this recipe with fresh pineapple wedges, canned pineapple rings, and dried and sugared pineapple tidbits. You can also use dried pineapple without sugar added. (However, I’d like to note here the dried sugary version was my personal favorite of the three flavor-wise.)

For chocolate, I used mini milk chocolate chips because the mini chips melt quickly. You could also use regular chocolate chips or chopped chocolate bars. If you use Ghirardelli melting chocolates or candy melts, you shouldn’t need the added oil.

Use Lily’s chocolate chips for a low carb option with no sugar added. That said, this sweet treat will still not be keto diet-friendly, since pineapple is not a low carbohydrate food. You can easily make it vegan using your favorite vegan chocolate chips.

I made milk chocolate covered pineapple drizzled with white chocolate. However, you could also make white chocolate covered pineapple and drizzle with dark chocolate. Why not?

If you’d really like to go the extra mile, top the chocolate pineapple with any of the following:

  • Flaky salt
  • Shredded coconut (toasted coconut flakes are great)
  • Sanding sugar
  • Sprinkles or jimmies
  • Mini chocolate chips
  • Cacao nibs
  • Chopped peanuts
  • Sliced almonds
  • Chopped cashews
  • Chopped macadamia nuts
  • Orange zest

Make sure to sprinkle on the toppings before the chocolate coating dries and hardens.

You also need wax paper, freezer paper, or parchment paper for the chocolate coated pineapple to dry on. Paper towels are useful to dry fresh and canned pineapple. Toothpicks are a great tool for dipping pineapple tidbits in chocolate without making a big mess.

Here are the steps for making chocolate dipped fresh pineapple:

  1. Core and cut the pineapple. I’ll talk about cutting pineapple spears below. You could also chop the pineapple into tidbits or slice it into rings.
  1. Dry the pineapple. Lay the pineapple spears in a single layer on paper towels. Pat the excess moisture away from the top of the pineapple with more paper towels.
  1. Melt the chocolate. You can use a double boiler on the stove or use the microwave to melt chocolate. I mix ½ cup mini chocolate chips and 1 teaspoon coconut oil and microwave on high in 30 second increments until melted.
  1. Dip pineapple. I prefer to dip only one end of the pineapple spear in chocolate. If you want to dip the whole pineapple piece, put the pineapple spears on a skewer before dipping. Place chocolate dipped pineapple on parchment paper to dry.

  1. Let chocolate pineapple dry. I let the chocolate dry and harden before decorating. You could also sprinkle jimmies or other toppings on the chocolate before it dries.
  1. Decorate the chocolate pineapple pieces. To decorate, I melted ¼ cup mini white chocolate chips and ½ teaspoon coconut oil in the microwave. You can use a drizzle spoon or a piping bag to drizzle the melted white chocolate over the pineapple pieces. I sprinkled sanding sugar on some of the pieces before the white chocolate dried.

🔪 How do you cut a pineapple for dipping?

To cut a pineapple, begin by rinsing with cool water to clean and pat dry. Cut the top and the bottom off the pineapple. Stand the pineapple up, and slice the rough pineapple skin off in strips.

Next you need to remove the pineapple core. To do so, cut four large pieces off the pineapple, north, south, east, and west around the core. Discard the core.

Now all you should have left is the edible pineapple flesh. Cut the pieces into long wedges, each about 4-5 inches long and about an inch wide.

The process for making chocolate pineapple rings is similar to fresh. Here are the step-by-step instructions:

  1. Drain and dry the pineapple. Drain the canned pineapple rings and place the pineapple pieces in a single layer on a paper towel. Pat the excess moisture away from the top of the pineapple with more paper towels.

If you can find sugared dried pineapple, it’s so tasty dipped in chocolate! You can use the sugared dried pineapple rings or the sugared pineapple tidbits. For the tidbits, follow the chocolate melting directions above, then dip them as suggested below.

How to Dip Pineapple in Chocolate

Dipping pineapple chunks in chocolate will make a mess if you use your hands. Instead, grab the dried pineapple tidbits with a toothpick, then dip them one by one. You can remove the tidbits from the toothpick by carefully pushing it off with a fork.

If you’re having trouble covering the pineapple with chocolate on all sides, use a spoon to help.

Canned and fresh chocolate dipped pineapple slices will last up to 1-2 days in the fridge. After that, the uncovered parts of the fresh pineapple can get a bit dried out. Chocolate covered dried pineapple tidbits can last a week or longer.

Store chocolate covered pineapple in the refrigerator. Do not leave chocolate covered pineapple out at room temperature for more than 1-2 hours.

This is a level 3 recipe (weight maintenance and active lifestyles). Pineapple is a heart-healthy food, packed with vitamin C, potassium, and fiber. No surprises here, but unfortunately covering fruit in chocolate essentially turns it into candy, with lots of added sugar and fat.
I feel that a lot of the best nutrition info is simple common sense. If you have a weight loss goal, it’s best to enjoy the natural sweetness in fruits without adding a bunch of chocolate. In addition to the calorie savings, you’ll also save some time in the kitchen.
Fresh and canned pineapple are relatively low calorie fruits, though they are not considered low carb. Dried pineapple is a more concentrated source of calories, since the water was removed. The dried pineapple is also often sugared, making it the highest calorie option in the bunch.
That said, I thought the chocolate covered dried pineapple was the best tasting of the bunch. (Taste definitely matters!) If you’re looking for a treat to satisfy a sweet craving, this recipe can hit the spot for chocolate lovers when plain pineapple isn’t enough.
IMHO, some of the low carb chocolate chips really do taste like the regular stuff. They can be a great way to cut some calories and sugar from treats without compromising on flavor. Lily’s is one brand I’ve tried and highly recommend for this recipe.
