My cinnamon spice overnight oats taste just like the classic Quaker oatmeal packets you may remember from childhood. With cozy flavors of cinnamon, nutmeg, and a touch of maple syrup, these oats are easy to prep ahead and perfect for busy mornings. Pair them with fresh fruit and creamy yogurt for a simple, satisfying breakfast that feels both nostalgic and nourishing.

Here are the ingredients you need to make this recipe:
- ½ cup dry oatmeal
- ½ cup milk
- 1 tablespoon maple syrup
- ½ teaspoon cinnamon
- 1/8 teaspoon nutmeg
- Small pinch of salt

I prefer using old fashioned rolled oats for overnight oats, but quick oats and instant oats are good options too. Instant oats create a smoother texture because they’re chopped more finely than rolled oats, which gives a different mouthfeel.
For the liquid, I used unsweetened almond milk since it’s what I had. To boost protein, try dairy milk, soymilk, or a plant-based milk that’s been fortified with extra protein.

Add all of the ingredients to a bowl and stir until everything is combined.
Transfer the oat mixture to a 1½ to 2-cup mason jar or food storage container. Cover and refrigerate overnight. In the morning, stir again and enjoy chilled.
Overnight oats are great for meal prep. Make several jars at once and store them in the fridge for up to 3–4 days.

Worth the wait, definitely, as I’m all-in for everything cinnamon, particularly when you apply your customary talents.
Would you believe, despite fancying myself a foodie, I really hadn’t much experience with tahini until a couple years ago? Great ingredient, though, particularly as it gives you the sense you’re cheating, when it’s quite healthy. Really.
