Measure out 120 grams of all-purpose flour using a food scale. Weighing dry ingredients will help you get consistent results in baking and cooking.
Separate the white and yolk of one large egg. Beat the egg white with an electric hand mixer for 3-4 minutes until stiff peaks form. (This is my secret ingredient to get extra fluffy pancakes.)

This is a level 3 recipe (weight maintenance and active lifestyles). Are Denny’s pancakes healthy? In short, I wouldn’t consider Denny’s pancakes a great choice by general nutrition standards. They’re loaded with white flour, added sugar and added fat. Denny’s cinnamon roll pancakes have some particularly wild nutrition stats. Two pancakes come to nearly 1000 calories with 185 grams of carbs and 125 grams of sugar (!). The AHA recommends limiting added sugars to 25 grams per day for women and 36 grams per day for men. The cinnamon roll pancakes offer 3-5 times the daily limit in two pancakes. I’d definitely think of them more like an indulgent dessert than a healthy breakfast food. The healthiest pancakes at Denny’s are the plain buttermilk pancakes or the 9-grain pancakes. If you’d like one of the flavored pancakes, the double berry banana pancakes are your best bet. These options are all under 500 calories and much lower in sugar than the other Denny’s pancakes. Like many restaurant foods, the pancakes at Denny’s are fairly high in sodium. One of the benefits of homemade is you can skip the salt if you are on a low sodium diet. You could also swap the sugar for a low carb sugar and use sugar-free maple syrup to make your pancakes no sugar added. To increase the fiber in your pancakes, replace half the white flour with whole wheat flour. Other ways to make a healthier pancake include using nut butter and fresh fruit for toppings (instead of syrup and butter) and adding nutritious mix-ins like flax seeds. Hi Marisela, great question! You could mix the dry ingredients ahead (kind of like a pancake mix) and then add the wet ingredients in the morning. I’m thinking the beaten egg white might lose its airiness and the butter will solidify and make the batter a different consistency if added the night before.

Here’s what I’d do… take this highly rated pumpkin buttermilk pancake recipe: https://cooking.nytimes.com/recipes/1018934-fluffy-pumpkin-pancakes , and add in white chocolate chips and chopped candied pecans prior to cooking. Then you’ll need the “pecan pie sauce”… I’m thinking either a caramel sauce or dulce de leche would be amazing. Seriously, there’s no way that wouldn’t be delicious!
