Salmon fillets that are 4 ounces each and ½-inch thick will take 15-20 minutes in an oven preheated to 375F (190C). This time is for salmon in foil packets (or use parchment packets to bake salmon without foil).
Ingredients for oven baked salmon:
- 1 lb fresh salmon (454g; or thawed from frozen)
- 16 thin lemon slices
- 2 tablespoons melted butter
- 2 tablespoons fresh-squeezed lemon juice
- Cajun spice (or other seasonings)
- 8 garlic cloves, minced
- Cooking oil spray
Preheat the oven to 375F (190C). Cut the salmon into four 4-ounce (113g) portions. Cooking smaller pieces ensures even doneness—larger fillets tend to dry out at the edges before the center reaches a safe temperature.
Pat the salmon dry with paper towels. Lightly spray four pieces of foil with cooking spray, then place four lemon slices in the center of each. Set a salmon fillet on top of the lemons. If any piece has a thin edge, tuck it under to prevent overcooking.
Fold up the edges of each foil piece to create a slight barrier for the liquids. Drizzle melted butter over the salmon, then sprinkle with Cajun seasoning (or your favorite herbs and spices).
Add freshly minced garlic and a squeeze of lemon juice to each packet.
Seal the foil packets and arrange them in a single layer on a dark baking sheet. Place the sheet on a rack positioned about one-third down from the top of the oven. Bake for 15-20 minutes.
Once done, check the internal temperature with a meat thermometer. If it hasn’t reached 145F (63C), return it to the oven for a few more minutes.

Avoid broiling the opened salmon packets after baking—unless you want to risk an oven fire! While some recipes suggest it, I learned the hard way that the butter in my salmon packets caught on fire. (Recipe testing definitely keeps things interesting!)

The USDA recommends a minimum internal temperature of 145F (63C) for safely cooked salmon. You’ll know it’s ready when it flakes easily with a fork. To be sure, check the thickest part of the fillet with a kitchen thermometer.
How to Store & Reheat Baked Salmon
Fridge: Store baked salmon in a covered container in the refrigerator for up to 3-4 days, but for the freshest taste, I recommend eating it within 1-2 days.
Freezer: Cooked salmon can be frozen in an airtight bag with the air pressed out.
Reheating: Warm it in the microwave on high for 1-2 minutes—just remember to remove any foil first!
Since these are individual salmon packets, I suggest making just what you’ll eat fresh. Raw salmon can be refrigerated for 1-2 days before cooking or freezing.

For uncovered fillets, bake in a preheated oven at 375°F for 10-12 minutes per inch (2.54cm) of thickness. Keep in mind that thicker salmon fillets need more time.

- Fold the foil packets closed and place them in a single layer on a dark baking sheet. Put the cookie sheet on a rack about ⅓ down from the top of the preheated oven. Bake for 15-20 minutes at 375°F (190°C).
- After baking, check the temperature of the salmon with a meat thermometer. The safe minimum internal temperature for fish is 145°F (63°C). Allow the salmon to rest for 5-10 minutes before serving.
