🛒 Kodiak Cakes Applesauce Bread Ingredients 

Here’s everything you’ll need to make Kodiak applesauce bread

  • 1½ cups unsweetened applesauce 
  • ½ cup granulated sugar (100g) 
  • ½ cup light brown sugar (100g) 
  • 2 large eggs 
  • ¼ cup oil 
  • 2 tablespoons milk 
  • 2 cups Kodiak Cakes Power Cakes Buttermilk Flapjack Mix (252g) 
  • ½ teaspoon baking soda 
  • ½ teaspoon baking powder 
  • 1 teaspoon cinnamon 
  • ½ teaspoon nutmeg 
  • ½ teaspoon allspice (optional) 
  • Cooking oil spray

For the cinnamon pecan crumble topping: 

  • ⅓ cup chopped pecans 
  • ¼ cup light brown sugar (50g) 
  • ½ teaspoon cinnamon

If you’re out of applesauce, homemade pear sauce is an excellent applesauce alternative. To make it, swap pears for the apples in my applesauce recipe, then mash them with a potato masher near the end of cooking for a similar consistency. 

Using Kodiak protein pancake mix instead of flour is an easy way to add extra protein and fiber in baking recipes without sacrificing flavor. Since the mix already contains some leavening, this recipe requires only a small amount of additional baking powder and baking soda. 

For extra crunch, stir ½ cup of chopped pecans or walnuts directly into the batter before baking. 

You’ll also need a 9×5-inch (22.9×12.7 cm) loaf pan. Lining the pan with parchment paper isn’t required, but it makes lifting the finished loaf from the pan easier. For the most consistent results, I recommend weighing your dry ingredients with a kitchen scale rather than measuring cups. 

🍎 How to Make Kodiak Cakes Applesauce Bread 

Preheat the oven to 350F (177C). Mist a 9×5-inch loaf pan (22.9×12.7 cm) with cooking spray.  

In a large bowl, whisk together the applesauce, granulated sugar, brown sugar, oil, eggs, and milk until smooth.

In a separate bowl, stir together the Kodiak Cakes mix, baking soda, baking powder, cinnamon, nutmeg, and allspice (if using).

Add the bowl of dry ingredients to the wet ingredients and gently stir until combined. Avoid overmixing. Pour the batter into the prepared loaf pan and smooth out the top.

In a small bowl, stir together the chopped pecans, brown sugar, and cinnamon. Sprinkle the crumble evenly over the top of the loaf.

Bake for 50-60 minutes at 350F (177C), or until a toothpick inserted into the center comes out clean or with small crumbs attached. If the top begins browning too quickly, loosely tent the loaf with foil towards the end of the baking time. 

Allow the applesauce bread to fully cool in the pan before removing and slicing.

To make muffins instead, mix up a batch of the batter, pour it into prepared muffin tins, and bake at 350F (177C) for about 18-22 minutes.

Leftovers

Store leftover Kodiak Cakes applesauce bread in the refrigerator for up to 3-4 days. Wrapping the loaf in plastic wrap helps to keep it fresh.

For longer storage, freeze individual slices wrapped in plastic wrap and placed in a freezer-safe bag with as much air removed as possible. Thaw overnight in the refrigerator or warm individual slices briefly in the microwave before serving.
