If you’d like egg free banana bread, you can make a gel with flax seed meal and water in place of the eggs. I’ll provide more details on this below. (Note: While the Kodiak buttermilk pancake mix contains no egg, traces of egg may be present due to shared processing equipment.)
The flax gel substitution creates a denser bread that doesn’t rise quite as much. I enjoyed the textural difference, but my husband and son had a strong preference for the banana bread with eggs.

Preheat your oven to 350 degrees Fahrenheit. Mist your mini loaves pan (or a muffin tin) with some cooking spray.

Using flax meal as an egg replacer helps with the binding but not really the leavening. Your finished bread won’t have as much as a rise, but it will still be moist and delicious.
Honestly, I preferred this version to the one with eggs. However, my family outvoted me in their preference for the bread with egg. That’s why I’m sharing the egg version in the recipe below.
The process for making Kodiak Cakes banana bread with flax is nearly identical to making it with eggs. Instead of stirring an egg into your wet ingredients, you’re going to be using a mix of flaxseeds and water.

You can also make most banana bread recipes in a cake pan. However, this scaled-down banana bread recipe doesn’t provide enough batter to fill a full sized loaf pan or a cake pan.
Can you make good banana bread with unripe bananas?
I don’t recommend using unripe bananas in this recipe to make banana bread. Since we aren’t adding sugar or syrup, overripe bananas are providing most of the sweetness in the bread. Your Kodiak Cakes bread probably won’t be sweet enough if you use unripe bananas.
That said, I have a little trick for you that I picked up from Food52 if your bananas aren’t ripe enough. Place your bananas (unpeeled) on a parchment-lined baking sheet. Bake in a 300 degrees Fahrenheit oven until the peels turn black. Voila!
Let the bananas cool and then peel and use in recipes. Break any unused “ripened” bananas into chunks and freeze for later use.

Having issues with gooey banana bread? If your banana bread is doughy or raw in the middle, it’s likely that it is undercooked. There are a few issues that could be to blame.
