This Kodiak Cake pancake mix banana bread is studded with pecans and has a hint of cinnamon. It’s a great alternative to Kodiak flapjacks and waffles because you can make it ahead. I love having a grab-and-go bite to eat for busy weekday mornings.

I decided to make this banana bread in a mini loaf pan. This means you’ll be able to enjoy a single serving of banana bread without having to cut slices. The bread will be evenly cooked throughout, without any mushy middle issues (like can happen with larger loaves).

These cute mini bread loaves are a great way to use up that last bit of Kodiak mix in the box. Kids like them, and the mini loaf size is already portion controlled.

Aside from that, you can customize them however you choose. Do you want banana nut bread but don’t care for pecans? Make banana walnut bread instead.

Or maybe you’d like to swap the cinnamon for a pinch of pumpkin pie spice. How about trying almond extract in place of the vanilla?

  • Low in sugar: There’s a tiny amount of added sugar in the buttermilk Kodiak Cakes mix. Other than that, this high protein banana bread has no added sugar. If you use a very ripe banana, your bread should have enough sweetness without sugar added. No maple syrup, honey, brown sugar, or other sweeteners are needed.

You only need six ingredients to make these Kodiak mini banana breads. Here is what you should have on hand before getting started:

  • Mashed, Very Ripe Banana
  • Large Egg
  • Chopped Pecans (chopped walnuts may be substituted)
  • Cinnamon
  • Vanilla Extract

I also recommend having some cooking oil spray to mist the mini loaf pans. The bread has a tendency to stick to the pans if you don’t oil them.

If you’d like egg free banana bread, you can make a gel with flax seed meal and water in place of the eggs. I’ll provide more details on this below. (Note: While the Kodiak buttermilk pancake mix contains no egg, traces of egg may be present due to shared processing equipment.)

The flax gel substitution creates a denser bread that doesn’t rise quite as much. I enjoyed the textural difference, but my husband and son had a strong preference for the banana bread with eggs.

For kitchen equipment, I recommend having a potato masher to mash the banana, as well as a mini loaf pan. You can also make this recipe in a muffin tin; doing so may shorten the cooking time. This recipe makes two mini bread loaves or about three muffins.

🍞 How to Make Kodiak Banana Bread

Ready to have some warm and delicious Kodiak banana bread in no time flat? Let’s get started!

Preheat your oven to 350 degrees Fahrenheit. Mist your mini loaves pan (or a muffin tin) with some cooking spray.

If you haven’t already, mash your banana using a potato masher or a fork. Use a super ripe banana (preferably mushy). It’s much easier to mash and it will add more sweetness to your bread.

In a small bowl, mix the mashed banana, egg, vanilla, and a bit of water. Set this mixture aside.

In another small bowl, stir the Kodiak mix and cinnamon together. Now add your wet ingredients to your dry mixture and stir gently. You want to just moisten all of the dry mix.

Next, stir your chopped pecans into the banana bread batter. Can you believe that you are almost done already?

Fill two compartments of your prepared mini loaf pan with the banana bread mixture. (You’re making two mini loaves, so you’ll have one to share… or you can hog it to yourself. Haha)

Bake your Kodiak Cakes banana bread for 25-27 minutes in the top third of your preheated oven. A toothpick inserted into the center of a fully cooked bread should come out clean. (Some small crumbs attached are ok too.)

I enjoy banana bread best with a drizzle of creamy peanut butter or almond butter on top. Believe it or not, I usually prefer nut butter on banana bread to regular old butter! (Nut and seed butters are lower in saturated fat than regular butter as well, if you’re trying to cut back.)

🍌 How to Make Kodiak Cakes Banana Bread without Eggs

You can make this banana bread recipe pretty easily without the eggs, but the results will be a little different. Eggs act as both a leavening and a binding agent in this Kodiak banana bread recipe. Kodiak Cakes mix also contains leavening agents, but the egg gives the bread an extra boost.

Using flax meal as an egg replacer helps with the binding but not really the leavening. Your finished bread won’t have as much as a rise, but it will still be moist and delicious.

Honestly, I preferred this version to the one with eggs. However, my family outvoted me in their preference for the bread with egg. That’s why I’m sharing the egg version in the recipe below.

The process for making Kodiak Cakes banana bread with flax is nearly identical to making it with eggs. Instead of stirring an egg into your wet ingredients, you’re going to be using a mix of flaxseeds and water.

To make it, simply stir a teaspoon of ground flax meal into ¼-cup of water. Let this mixture sit for 5 minutes before adding to the recipe. The rest of the recipe is exactly the same as when you make it with an egg, except you need to bake the bread for 27-30 minutes. Easy!

🥛 What can you serve with banana bread?

If you’re already going to the effort of making banana bread, why not keep the rest of the meal easy? Serve this bread with some fruit and a glass of milk, and you’ve got a nice start to your day. You can see in the photos I served the bread with cut grapefruit and orange slices. Yummy!

For those who want to make something to go with banana bread, here are some serving suggestions. Cottage cheese and yogurt are great options to add some calcium (and additional protein!) to your meal. If you really want to go the extra mile, try making your own! Here’s how to do it:

You could also serve your bread with a big fruit salad. My Fruits that Start with B Fruit and Yogurt Bowls are pretty much a meal by themselves. You could add the banana bread to this for a high energy meal (i.e., high in calories).

Can you bake banana nut bread without a bread pan? Can you make banana bread in a cake pan?

Yes, you can bake banana bread without a bread pan! This banana bread recipe will work in a mini loaf pan or a muffin pan. Quick breads are pretty versatile in terms of baking vessels that can be used.

You can also make most banana bread recipes in a cake pan. However, this scaled-down banana bread recipe doesn’t provide enough batter to fill a full sized loaf pan or a cake pan.

Can you make good banana bread with unripe bananas?

I don’t recommend using unripe bananas in this recipe to make banana bread. Since we aren’t adding sugar or syrup, overripe bananas are providing most of the sweetness in the bread. Your Kodiak Cakes bread probably won’t be sweet enough if you use unripe bananas.

That said, I have a little trick for you that I picked up from Food52 if your bananas aren’t ripe enough. Place your bananas (unpeeled) on a parchment-lined baking sheet. Bake in a 300 degrees Fahrenheit oven until the peels turn black. Voila!

Let the bananas cool and then peel and use in recipes. Break any unused “ripened” bananas into chunks and freeze for later use.

Why is my banana bread raw in the middle? How do you know when banana bread is properly cooked?

Having issues with gooey banana bread? If your banana bread is doughy or raw in the middle, it’s likely that it is undercooked. There are a few issues that could be to blame.

If your oven temperature was too high, the outside of your banana bread may have browned before the inside of the bread finished cooking. Try a lower baking temperature next time.

You also could have used the wrong sized pan for the recipe. While you can use a variety of differently sized pans to make banana bread, you might have to adjust the cooking time.

To check your banana bread for doneness, stick a toothpick into the center of the cooked loaf. The toothpick should come out completely clean or with small crumbs sticking to it. If the toothpick has wet batter on it, the banana bread has not finished baking.

Why do those little black filaments appear in cooked banana bread?

The little black filaments are most likely fibers from the banana that are completely normal and harmless.

How long can banana bread be left out without refrigeration?

For optimal freshness (and as a food safety precaution), I would not leave banana bread out on the counter for more than 1-2 hours. After cooling, wrap your individual banana bread loaves in plastic wrap and store in the refrigerator. Any bread that will not be used in 3-4 days should be stored in the freezer.

Why did my banana bread come out so dense?

Banana bread batter that has been overmixed can lead to a dense loaf. Remember above how I said you should gently mix your wet ingredients into the dry ingredients? That’s because I’m trying to avoid making banana bread that is too dense.

What are some other ways to make high protein banana bread?

There are many, many ways to make banana bread that is high protein! If you don’t want to use Kodiak Cakes Power Cakes mix, consider some of these other add-ins:

  • Egg whites
  • Greek yogurt or skyr
  • Almond flour
  • Peanut flour
  • Protein powder such as whey protein powder (only if you like it, of course!)
  • Dry milk powder
  • Nut or seed butter (these will also add a lot of calories)

There are ways to increase the protein in baked goods that will fit most special diets. For example, if you are aiming to eat more whole foods, choosing ingredients like eggs and yogurt may be the best fit. Vegans may want to use plant based protein powder, nuts, and seeds.

Instructions

  • Preheat your oven to 350°F (175°C). Mist your mini loaf pan with the cooking spray.
  • Mash the banana with the potato masher (if you haven't done this already).
  • In a small bowl, mix the mashed banana, egg, water, and vanilla extract. Set this mixture aside. 
  • In another small bowl, stir the Kodiak mix and cinnamon together. Now add your wet ingredients to your dry mixture and stir gently. Getting overly vigorous with the stirring can lead to dense banana bread. Gently stir the chopped pecans into the banana bread batter as well.
  • Fill two compartments of your prepared mini loaf pan with the banana bread mixture. (This recipe makes 2 mini loaves. The pan gets filled nearly to the top.)
  • Bake your Kodiak Cakes banana bread for 25-27 minutes on a rack about ⅓ from the top of your preheated oven. When finished baking, a toothpick inserted into the center of the bread should come out clean. (Some small crumbs attached to the toothpick are ok too.) 
  • Drizzle with peanut butter or almond butter, if desired.

Notes

Make it egg free: Substitute the egg and 1 tablespoon water for 1 teaspoon flax seed meal and 1/4-cup of water. Bake the mini loaves for 27-30 minutes instead of the time given above.
 

💭 Expert Tips from Dietitian Summer Yule

This is a level 3 recipe (weight maintenance and active lifestyles).  There are no surprises for regular readers here, but items made with flour get the bump to level 3. This is because items with flour don’t tend to be very satiating in comparison to the calories they provide.  
It can be easy (for some) to eat an excess of calories when they include a lot of flour-based items in their diet. Baked goods made with whole grains may feel a bit more filling than baked goods made with refined grains due to fiber content. However, almost all baked goods provide a lot of energy in a small volume. 
You’re getting 236 calories and 11.3 grams of protein per mini loaf of banana bread. That’s almost double the amount of protein in my mini spelt banana bread recipe, for about the same number of calories. However, unlike spelt flour, the Kodiak Cakes Power Cakes mix counts as an ultra-processed food. 
If you have a weight loss goal, it’s important to ensure adequate protein intake, as protein is the most satiating macronutrient. On the other hand, people tend to eat more calories when presented with ultra-processed food options. So, for fat loss, is an ultra-processed food with higher protein a better choice than a whole food with lower protein? 
What I’m ultimately asking here is… 

Are Kodiak Cakes okay if you’re trying to lose weight? 

As with everything in nutrition, the answer is going to depend on the context. Though they might not be the most “perfect” breakfast, I occasionally enjoy this product. It’s possible to fit some of my “level 3” recipes into many weight loss plans. 
I do find baked goods made with Kodiak Cakes to be at least a smidge more filling than baked goods with lower protein. I think the Kodiak Cakes mix tastes completely normal (no weird chalky aftertaste from protein powder). It helps satisfy any cravings I have for waffles, quick bread, etc. and I enjoy it. 
But what you’re trying to lose weight with a low carb or keto approach? The first ingredient in the buttermilk Kodiak Cakes mix is whole grain flour. Baked goods made with this mix may not be a good fit for your preferred weight loss strategy. 
Ultimately the answer to whether Kodiak Cakes mix is a good fit for your particular dietary pattern is “it depends.” Some may choose to avoid it, while others find it a helpful addition in meeting their goals. What I aim to do here is simply present different options; you get to determine what might work best for you.

    1. Hi Jason, thanks for dropping in! I didn’t double the recipe in the video. Did you use a mini loaf pan with compartments that are the same size as the one I’m using? I linked to the one I use in the recipe card. There are small loaf pans with much larger compartments, and if you use one of those, your yield will be less.

      My other thought is that your Kodiak mix may have been packed down more or less than mine. I’ll try to get the weights on the dry ingredients up tonight to help ensure everyone gets consistent results. Hope that helps!
