My Kodiak Cakes crackers are seasoned with garlic and rosemary and couldn’t be easier to make. These delicious protein crackers are perfect alongside your favorite soup or as a simple snack, and they have more fiber than typical crackers. If you’re only using pancake mix for sweets, this is your sign to try some savory recipes. There’s a whole world of versatile, satisfying options waiting!

- 1 cup Kodiak Cakes Power Cakes Buttermilk Flapjack & Waffle Mix (126g)
- 1 teaspoon dried rosemary
- ¼ teaspoon each: garlic powder, onion powder, salt
- ¼ cup water
- 2 tablespoons olive oil
- Flaky sea salt
- Cooking oil spray

Plain buttermilk Kodiak Cakes pancake mix is surprisingly versatile, and I recommend keeping a box on hand. I often use it in place of flour to boost protein and fiber without sacrificing flavor. In my opinion, these crackers taste better than most whole grain options.
Feel free to adjust the herbs and spices to your liking. One teaspoon of garlic powder equals only about one garlic clove, so add more than the ¼ teaspoon here if you want a stronger garlic flavor. You can also swap the rosemary for Italian seasoning or dried oregano.
Some people prefer to make crackers with butter, but I find they tend to turn out crispier using olive oil. They’re a little easier to roll thin as well.
For equipment, you’ll need a rolling pin, parchment paper, a baking sheet, and a pizza cutter.
😋 How to Make Kodiak Cakes Crackers
Preheat the oven to 425F (218C). For the most consistent results, weigh the Kodiak mix instead of using a cup measurement. In a medium bowl, combine the mix with the rosemary, garlic powder, onion powder, and salt.

Add the water and olive oil, stirring until a cohesive dough forms. Roll the dough ball between two sheets of parchment paper as thinly as possible, about 1/16–1/8 inch (0.16-0.32 cm) thick.
Aim for a rough square, but don’t worry about leaving rustic edges. Remove the top sheet of parchment when finished.
Use a pizza cutter to slice the dough into crackers about 1 by 2½ inches (2.54 by 6.35cm). Poke eight holes into each cracker with the tines of a fork. Mist the tops of the crackers well with cooking spray and sprinkle with flaky sea salt.

Transfer the parchment with the crackers onto a dark baking sheet. Bake for 8–10 minutes at 425F (218C). After 5-6 minutes, get the crackers on the outside edges of the sheet to the middle of the sheet to prevent burning. Remove any crackers that are darkening too quickly.
Be sure to watch them closely towards the end of the baking time, they go from perfect to burnt fast!
Allow the crackers to cool completely before eating.

Kodiak Cakes Crackers Storage
Once cooled, I like to portion the crackers into individual servings in small baggies (pressing out the air), for an easy grab-and-go snack. They’ll keep on the counter for up to 2–3 days, or you can freeze them for longer storage.
