My Kodiak Cakes skillet cookie is a shareable dessert that’s hard to resist. You’ll love this warm chocolate chip cookie with crisp, caramelized edges and a soft, gooey center, topped with creamy ice cream and a drizzle of chocolate sauce. The Kodiak Cakes mix adds a boost of protein and fiber, and I include easy tips to make it gluten free or vegan too.

To make my skillet cookie with Kodiak Cakes pancake mix, you’ll need the following ingredients: 

  • 1⅛ cups Kodiak Cakes Power Cakes Buttermilk Flapjack & Waffle Mix (142g) 
  • ½ teaspoon baking soda 
  • ½ teaspoon salt 
  • 8 tablespoons butter, softened 
  • 6 tablespoons granulated sugar (72g) 
  • 6 tablespoons packed light brown sugar (72g) 
  • 1 large egg 
  • ½ teaspoon vanilla extract 
  • 6 ounces chocolate chips (170g) 
  • Cooking oil spray 
  • Vanilla ice cream and chocolate syrup (optional, for serving)

Kodiak Cakes mix is a whole grain pancake mix with added protein. I usually buy the plain buttermilk version since it’s the most versatile for different recipes. 

For this recipe, you’ll also need an 8-inch (20.3 cm) diameter cast iron skillet and an electric hand mixer. For the most consistent baking results, weigh the dry ingredients with a food scale instead of using measuring cups. 

Preheat the oven to 375F (190C). Lightly coat an 8-inch (20.3 cm) cast iron skillet with cooking spray.

In a small bowl, whisk together the Kodiak Cakes mix, baking soda, and salt.

In a large bowl, use an electric hand mixer to beat the softened butter and sugars until creamy. Add the egg and vanilla, mixing until combined. Add the dry ingredients and mix again.

Once everything is combined, stir in the chocolate chips by hand.

Transfer the cookie dough to the prepared skillet, pressing it into an even layer using the back of an oiled glass or clean hands.

Bake for 15-20 minutes on a rack positioned about one-third down from the top of the oven. Serve warm, topped with vanilla ice cream and chocolate sauce if desired. (We highly recommend these additions!)

If you want to be extra cautious about food safety, use a food thermometer to ensure the middle of the cookie reaches an internal temperature of 165F (74C).

Skillet Cookie Tips

This cookie is baked a bit longer than traditional chocolate chip cookies so it holds together better. At 15 minutes, the center will be a soft and hot cookie dough. At 20 minutes, you’ll get deeper caramelization, a fully set top, and a less gooey center.

How to Store a Skillet Cookie

This skillet cookie is best enjoyed warm and scoopable. It can be sliced once cooled, though it may be tricky to remove from the skillet. Store leftovers in the refrigerator for 3-4 days, and wait to add ice cream and chocolate sauce until just before serving.
