My lemon pie popcorn recipe is an award-winning treat that couldn’t be easier to make. This candied lemon-flavored popcorn has a white chocolate drizzle and is sprinkled with mini graham crackers and mini marshmallows for texture. Pack it in decorated jars and it makes a nice gift for holiday or birthday celebrations. (If your family doesn’t eat it all first, that is!)

🍋 Lemon Pie Popcorn Ingredients
Here’s what you need to make my lemon pie popcorn:
- 6 cups popped popcorn
- ½ cup sugar
- 2 tablespoons water
- ½ tablespoon light corn syrup
- Pinch of salt
- 1/8 teaspoon lemon extract
- Dab of yellow gel food coloring
- ¾ cup white almond bark (this was 3 cubes for the brand I used)
- ½ teaspoon lemon zest
- 1 cup Teddy Grahams mini graham crackers
- ½ cup mini marshmallows

I like to pop plain popcorn in the microwave. You can also use the stovetop, or try my directions for air fryer popcorn.
I prefer gel food coloring for this recipe because it gives vibrant colors. You are welcome to use a few drops of liquid food coloring if you’d prefer.
There are a few pieces of kitchen equipment that are essential to this recipe. Make sure you have a small pot, an instant-read kitchen thermometer, and some parchment paper (to dry the popcorn) before you begin.
➕ How to Make Lemon Popcorn
Put the sugar, water, corn syrup, and salt in a small pot. Bring it to 270F (132C) on the stovetop over medium heat, stirring frequently. It’s important to get the syrup to the right temperature in order to candy the popcorn.
After it reaches the right temperature, take the syrup off the heat and quickly whisk in the lemon extract and food coloring.
Quickly stir the syrup into the popcorn (it hardens fast), spread the popcorn out on parchment paper, and let it dry.
While the popcorn is drying, melt the almond bark according to the package directions. I needed to melt it for 1 minute and 30 seconds on high in the microwave, then stir and heat in 15-30 second intervals until fully melted.
Drizzle the melted almond bark over the popcorn and sprinkle on the grahams and marshmallows while the bark is still wet.
Let the popcorn fully dry, break it into clumps, and enjoy.
You can store this popcorn in glass mason jars or a food-safe plastic bag with the air pressed out. If you plan on storing it for more than a day or two, add a moisture absorber to the package so the grahams don’t get soft.
This popcorn recipe does not require refrigeration. Keep it at cool room temperature; exposure to heat makes the almond bark melt and the popcorn sticky.
