Lunch tends to be the most difficult meal for me. I generally don’t have time to prepare complicated meals in the middle of the workday. I think many are in the same boat.
Because of this, most of the meal prep recipes on my site are things that I would have for lunch. You could of course have them for dinner (or even breakfast) if you would prefer.
Some people don’t like the slight textural changes that come with making salads 3-4 days ahead. Even with the dressing kept separate, the lettuce may not be as crisp.
If you know that you are picky about salads getting a little soggy, do not meal prep salads! Choose the soup, stew, or other meal prep recipes instead. Keeping any cooked grains separate from soups until just before eating is another way to maintain the right texture.
There are a few kitchen supplies that I find indispensable in helping me prep and store tasty, healthy meals. I highly recommend picking up some good knives, as well as some salad and food storage containers before you begin.
