🛒 Microwave Mexican Pizza Ingredients 

Here’s what you need to make microwave pizza

  • English muffins, split, toasted 
  • 1⁄3 cup refried beans 
  • 1½ ounces shredded Mexican cheese (43g; about 6 tablespoons) 
  • 1½ tablespoons each: salsa, corn 
  • ¼ avocado, chopped 
  • Cilantro (optional, for garnish)

For the pizza base, use toasted English muffins or bagels. Tortillas are too floppy to hold up well in the microwave. I like to toast the English muffins a little more than usual because the microwave softens them slightly. 

For the corn, use either drained canned corn or corn that has been thawed from frozen. The topping measurements below are precise to provide accurate nutrition information, but feel free to adjust the toppings to your liking. 

You’ll also need a microwave-safe plate for cooking the pizzas. 

🍕 How to Make Mexican Pizza in the Microwave 

Spread the refried beans evenly over the four toasted English muffin halves. If the beans are too thick to spread, thin them with a little water or warm them briefly in the microwave.

Sprinkle the cheese evenly over the pizzas, then top each one with salsa and corn.

Place the pizzas on a microwave-safe plate and microwave on high for 1 minute, or until the cheese is melted. Top each pizza with chopped avocado and cilantro, if desired, and serve immediately.

Leftovers

Microwave pizza can be stored in the refrigerator for up to 3–4 days or frozen, but it’s best when made and enjoyed fresh. For the best results, wait to chop the avocado and add it to the pizzas until just before serving to prevent browning.
