🥔 Mashed Potato and Rice Patties Ingredients 

All you need is a few simple ingredients to make this recipe: 

  • ½ cup cold leftover mashed potatoes (seasoned as you prefer) 
  • ¼ cup cooked leftover rice, chilled 
  • 2 tablespoons flour 
  • 1 large egg 
  • ½ teaspoon garlic powder 
  • ½ teaspoon onion powder 
  • Salt and pepper, to taste 
  • Cooking oil spray (for oven baked method) 
  • 2 tablespoons olive oil and 1 tablespoon butter (for stovetop method)

A 1½-tablespoon cookie scoop and a metal spatula make shaping and flipping these patties easier. If you’re baking them in the oven, have parchment paper and a cookie sheet ready. For pan frying, a cast iron skillet works best for a crispy, golden finish.

Oven Directions: Preheat the oven to 425F (218C) and line a baking sheet with parchment paper. Scoop eight 1½-tablespoon portions onto the sheet, spray with cooking spray, and bake for 20 minutes, flipping and flattening the patties halfway through baking time. Spray again after flipping. 

Stovetop Directions: Melt oil and butter in a cast iron skillet over medium heat. Scoop eight patties into the skillet and cook for 7 minutes, then flip, flatten, and cook for another 5–7 minutes until golden.
