According to the Food Network, rump roast is an inexpensive cut of beef known by several names in the US:
- Bottom Round Roast
- Round Tip Roast
- Standing Rump Roast (if a bone-in rump roast)
Rump roast comes from the back of the cow, near the tail. Chuck roast comes from the cow’s shoulder, and is not the same thing as rump roast.
Classic roast beef is most commonly made with top round roast (source). However, rump roast often has more marbling than top round and can also be used for a tasty beef roast recipe.
What is the best cooking method for rump roast? For fall apart, tender rump roast, nothing beats the slow cooker IMVHO. For a tender roast beef recipe, you can slice and serve, cooking rump roast in a Dutch oven will save time.
🥩 Rump Roast in Oven Ingredients
Here’s your shopping list to make rump roast in the oven:
- 3 lbs rump roast (1.36 kg)
- 1½ teaspoons salt
- ½ teaspoon black pepper
- 3 tablespoons cooking oil (I used olive oil)
- 1 medium onion, sliced
- 2 teaspoons dried thyme
- 1 teaspoon garlic powder
- 1 cup beef broth
I used a conventionally farmed rump roast from my local US grocery store for this recipe. Grass-fed, grass-finished roasts may need a lower temperature and longer cooking time (such as with slow cooking).
You also need a large cast iron Dutch oven, a good knife, foil, and a meat thermometer for this recipe. Using a meat thermometer is the best way to find the perfect cooking time for rump roast. The beef rump roast cooking time will vary depending on the weight and thickness of the roast you get.

Here are the step-by-step directions for how to cook a rump roast in the oven:
Let the rump roast rest at room temperature for one hour. Trim fat off the rump roast if it’s too fatty.
When the rest time is up, preheat the oven to 275F (135C).
Heat the oil in a large cast iron Dutch oven over medium heat on the stovetop. Season the rump roast with salt and pepper, and brown it on all sides (2-5 minutes per side).
Peel an onion, slice it in half, then cut it into thin half-moons. Add it to the Dutch oven along with the thyme, garlic powder, and beef broth. If the roast has a fattier side, arrange it fatty side up.
Put the Dutch oven on a rack 2/3 down in the oven (or use the middle oven rack for large ovens). Do not cover the pot.
How long to cook 3 lb rump roast in oven? Cooking rump roast in the oven takes about 60 minutes for medium or medium-rare. Do not cook the rump roast too long or it will get very tough!
The best way to check the doneness of a rump of beef roast is to use a meat thermometer. Here’s an internal rump roast temperature chart:

Should I cover my rump roast in the oven?
Do you cover a rump roast in the oven? I don’t cover the pan when baking an average 3-4 lb rump roast. Very large roasts (over 8 lbs or so) should be covered for part of the cooking time so they don’t dry out.

The minimum safe internal temp for roasted rump roast is 145F with a 3 minute rest time. As with steaks, I prefer the rump roast at 130F (54C). The color of the roast is not a good indicator of doneness (though completely brown/gray roast beef may be overdone).
Does rump roast get more tender the longer you cook it?
In general, rump roast that is slow cooked on low or pressure cooked will get more tender with a longer cooking time. Rump roast cooked in the oven uncovered, however, will get tougher with a longer cook time.

You can keep cooked and raw rump roast for up to 3-4 days in the refrigerator. Both raw and cooked rump roast can be frozen. I recommend storing slices of rump roast in a vacuum sealed freezer bag for long-term freezer storage.
Use leftover roast beef in roast beef sandwiches, cheesesteak, beef hash, or in a salad or pot pie. You can gently reheat leftover rump roast in the microwave, but be sure not to overcook it.

In this recipe, they’ve cooked a 3 lb rump roast covered at 300F (149C) for 3 hours. This will get you a slow cooker-style pot roast rather than classic pink roast beef.

I don’t recommend cooking roast beef uncovered at 325 or 350. Food Network has instructions for braising rump roast in a covered pot with vegetables at 350F. They cook the meat for 2 ½-3 hours.

This is a level 3 recipe (weight maintenance and active lifestyles). Rump roast is a fairly lean cut of beef that is naturally low carb, keto, and gluten free. It’s a great source of protein, highly bioavailable iron and zinc, as well as an assortment of B vitamins. Roast beef is most commonly eaten as part of a holiday feast or big Sunday meal, which is why I bumped it to level 3. That said, you could also make a lighter healthy meal with this protein. One way to do that is to pair a 4-6 ounce portion with non-starchy veggies (such as salad). It’s what we do consistently with our overall diet that matters most, not one particular food. It is definitely possible to include lean red meat such as rump roast in a heart healthy diet. In fact, I’d argue it’s a far more nutritious choice than many other comfort foods (such as cakes, cookies, etc).
