I have a passion for slow food, but sometimes I do need to get a meal on the table fast. Hectic work and family schedules don’t leave a lot of time for cooking some days. When times are busy, these under 30 minutes recipes are great to fall back on.

IMVHO, it’s fine to take shortcuts if it helps you to eat healthier. Using canned and frozen versions of foods can be a huge time-saver. Often, produce is packaged at peak ripeness, so you get many of the same nutritional benefits that you do with fresh.
Another simple way to save time on food preparation is to purchase chopped (or spiralized) fruits and veggies. These prepared foods will save you precious minutes on chopping, but that is not the only benefit. You are also spared from having to clean cutting boards, knives, or the spiralizer.
Some of these recipes use leftover cooked poultry. If you don’t have any on hand, you could use grilled chicken or chopped rotisserie chicken instead. With a little creativity, time no longer has to be a barrier to healthy eating.
