Spelt Banana Bread for One (No Added Sugar!)

This spelt banana bread recipe is made in a mini loaf pan, providing just enough for one serving. Perfect for portion control or people who live alone!

  • ½ banana, mashed (overripe)
  • 2 tablespoons water
  • ½ teaspoon ground flaxseed
  • ¼ cup spelt flour
  • 1 tablespoon chopped walnuts
  • teaspoon baking soda
  • ½ tablespoon Swerve, granular (optional; we preferred leaving it out)
  • pinch of salt
  • cooking oil spray of choice


  • Preheat the oven to 350°F (175°C). Mist one compartment of a mini loaf pan with the cooking spray.
  • Combine the mashed banana and water. Then stir in the rest of the ingredients. Put the mixture into the oiled compartment of the mini loaf pan.
  • Bake for 25-30 minutes. When finished baking, a toothpick inserted into the center of the bread will come out clean.


This is a level 3 recipe (weight maintenance and active lifestyles). If you’ve been here a while, you know all recipes with flour get the bump to level 3. However, if you have a fat loss goal, this is a much better option than most baked good recipes. It’s difficult to overindulge if you only bake yourself one serving! Haha
I extended this out into a full breakfast by adding plain Greek yogurt (calcium! protein!) plus some orange slices. I also drizzled my banana bread with peanut butter (healthy fat!). The nutrition info below is for the bread only; additions to your meal will (of course) alter the calorie count and other information.
