Sweet Potato Toast Air Fryer Recipe (Gluten Free, Paleo, Whole30)

Ingredients

  • 9 ounces sweet potato (255 grams; equals about one potato; choose a straight sweet potato with a cylindrical body for even slices)
  • salt and pepper, to taste
  • cooking oil spray (non-aerosol)

Instructions

  • Slice the pointy ends off the sweet potato. Using a knife or mandoline, carefully cut the sweet potato into ¼-inch thick slices (0.64 cm). You can keep the skins on the sweet potatoes. I yielded 6 slices.
  • Spray an air fryer tray or air fryer basket with cooking spray. Place the sweet potato slices in a single layer on the tray, and mist them with oil too. (You may need to air fry them in batches if your air fryer is small.)
  • Sprinkle the prepared sweet potato slices with salt and black pepper. If you have an air fryer oven, put the sweet potato slices in the top rack position.
  • To air fry: Air fry for 10 minutes at 400°F (200°C), then flip the toasts over and air fry 8-10 more minutes. You don’t have to add additional oil. Let them sit about 3 minutes to cool before topping and enjoying.
  • To oven bake: Preheat the oven to 350°F (175°C). Mist a dark baking tray with the cooking spray. Put your potato slices in a single layer on the tray and very lightly mist them with the cooking spray as well. Sprinkle with salt and pepper. Bake the sweet potato slices about ⅓ from the top of your heated oven for 13-15 minutes. When finished, let them cool a bit before popping in the toaster oven or toaster to crisp up.

Notes

This is a level 1 recipe (may help support fat loss). Sweet potato toasts make a nice base for a variety of low-calorie breakfast options. You can make this a meal that gives you a little bit of everything.
I like to add protein from eggs and healthy fats from avocado in addition to the energizing carbs from sweet potatoes. If you want to turn your sweet potato toast into a full meal, do as I did in some of these photos and make sure to top it with some high-quality protein and healthy fats.
Two of these topped toasts ends up being about 300 calories. Add a glass of dairy milk to this breakfast to bump up the protein and calcium a little more!
Just because I would consider this a healthy recipe, it doesn’t mean it’s right for everyone. Sweet potatoes are a starchy vegetable, so they aren’t a good fit for low carb or keto diets. If you are using one of these strategies for weight loss or blood sugar control in diabetes, a low carb bread may be a better option for you.
If you need a high energy meal, have a bunch of these toasts and add lots of healthy fat. Nut butters and seed butters provide about 200 calories per 2 tablespoons and can help make high calorie meals. Dried fruits and Medjool dates are also nutritious sources of concentrated calories.
