  • 4 ounces chicken breast (113g) 
  • 3 tablespoons chopped onions 
  • 1 teaspoon olive oil 
  • Salt and pepper, to taste 
  • 1/3 cup canned coconut milk (full fat) 
  • ½ tablespoon yellow curry powder 
  • 1 teaspoon tomato paste 
  • 1 teaspoon reduced-sodium soy sauce 
  • ½ teaspoon packed light brown sugar 
  • ½ teaspoon cumin 
  • ¼ teaspoon garlic powder 
  • Cooking oil spray 
  • Cooked rice, for serving 
  • Scallions, cilantro, and lime wedges for garnish (optional)

You’ll also need a 2-cup oven-safe ramekin, a meat thermometer, and aluminum foil to make this recipe. Make sure to use a curry powder you enjoy the flavor and spice level of; it plays a big role here.

How to Make Chicken Curry Air Fryer Recipe

Here are the step-by-step instructions to make chicken curry in the air fryer

Cut the chicken into 1-inch pieces (2.5cm). Mix the chicken breasts with the onions and oil, and season with salt and pepper. Air fry for 7-8 minutes at 375F (190C), until the chicken reaches a minimum safe internal temperature of 165F (74C) using a meat thermometer.

Mix the coconut milk, curry powder, tomato paste, soy sauce, sugar, cumin, and garlic powder together until smooth. Stir it into the chicken mixture in a small bowl. Mist a 2-cup ramekin with cooking spray and fill it with the chicken curry.

Cover the ramekin with foil and air fry for 8-10 minutes at 375F (190C) to warm. Spoon the saucy chicken curry over cooked rice, and garnish with sliced scallion greens, chopped cilantro, and lime wedges.
