This easy air fryer chicken curry has tender pieces of chicken cooked in a creamy curry sauce made with coconut milk. - 4 ounces chicken breast (113g)
- 3 tablespoons chopped onions
- 1 teaspoon olive oil
- Salt and pepper, to taste
- 1/3 cup canned coconut milk (full fat)
- ½ tablespoon yellow curry powder
- 1 teaspoon tomato paste
- 1 teaspoon reduced-sodium soy sauce
- ½ teaspoon packed light brown sugar
- ½ teaspoon cumin
- ¼ teaspoon garlic powder
- Cooking oil spray
- Cooked rice, for serving
- Scallions, cilantro, and lime wedges for garnish (optional)

Cut the chicken into 1-inch pieces (2.5cm). Mix the chicken breasts with the onions and oil, and season with salt and pepper. Air fry for 7-8 minutes at 375F (190C), until the chicken reaches a minimum safe internal temperature of 165F (74C) using a meat thermometer.
Mix the coconut milk, curry powder, tomato paste, soy sauce, sugar, cumin, and garlic powder together until smooth. Stir it into the chicken mixture in a small bowl. Mist a 2-cup ramekin with cooking spray and fill it with the chicken curry.
Cover the ramekin with foil and air fry for 8-10 minutes at 375F (190C) to warm. Spoon the saucy chicken curry over cooked rice, and garnish with sliced scallion greens, chopped cilantro, and lime wedges.
