Today, I’m going to teach you how to cook belly pork slices. With the Costco pork belly recipe below, the pork belly was already sous vide. That means all you need to do is season, heat, and eat.

But first, let’s make sure you pick up the right type of pork belly. Did you know that there are actually a few types of pork belly sold at Costco?

🐖 Swift Pork Belly

Costco sells whole pork belly that is 11-12 lbs. (5-5.4 kg), depending on whether you get the pork belly skin on. At my Costco, you can only purchase pork belly skin off.

Swift pork belly is boneless, with no artificial ingredients. This is a raw and minimally processed product that would be great for feeding a crowd. Keep Swift pork belly refrigerated before cooking it to a minimum safe temp of 145F (63C) with a 3-minute rest.

If you want crispy pork belly, you need to get the pork belly with the skin on. You might be able to purchase it at Costco online if you can’t find it in the store. My pork belly air fryer recipe is perfect for pork belly with skin.

🥓 Sliced Pork Belly

A second option is Costco’s boneless sliced pork belly. This raw sliced pork belly is skin-off, and perfect for pork belly bites, pork belly burnt ends, or for homemade bacon.

Costco sliced pork belly is boneless, and sold in packages that are approximately 6 lbs. (2.7 kg). This makes it a good pick if the Swift pork belly is too much for your family.

🐷 Kirkland Signature Sous Vide Pork Belly

Kirkland sous vide pork belly is Costco’s final pork belly offering, and it’s very different than the above two products. Kirland sous vide pork belly is fully cooked, cured, sliced, and hickory smoked. Since it is cured and smoked, it’s really more like thick bacon slices than typical pork belly.

These pork belly slices are my favorite of the Costco pork belly offerings. This is a unique product you probably won’t find in other stores, and a huge timesaver!

There’s only one option for Costco pork belly with skin, and that’s the Swift pork belly with skin on. Unfortunately, not all stores carry this option. My store only had the Swift pork belly with skin off.

Costco Sous Vide Pork Belly Air Fryer

Let’s start with how to cook pork belly in Ninja Foodi! The Philips, Instant Pot Vortex, Cosori, Nuwave, Kalorik, Breville, or whatever brand of air fryer you have should cook pork belly.

Cooking times may vary depending on the air fryer you use. Always check the food early the first time you try any new air fryer recipe! Here are the directions for Ninja Foodi pork belly:

The box of Costco sous vide pork belly contains two packages of five pork belly slices. You need four pork belly slices for this recipe.

Cut each pork belly slice into 5 pork belly bites. They’ll each be about 1-inch (2.54 cm) wide.

    Place the pork belly bites in a single layer in the air fryer basket.

    Season the pork belly lightly on the top with BBQ seasoning. The pork belly is already salted, so don’t overdo it.

    Air fry for 5 minutes at 400F (200C). (There is no need to preheat the Ninja Foodi.)

      Then flip the pork belly pieces, lightly season, and air fry for 3 minutes at 400F (200C).

        Ensure the pork belly has reached the minimum safe temp of 145F (63C) with an instant-read thermometer. If so, it is ready to serve.

          Optional: place the pork belly in a bowl and gently coat with ¼ cup of BBQ sauce. Put back in the air fryer in a single layer, and air fry for 3 more minutes at 400F (200C).

            Serve the BBQ pork belly bites with toothpicks for one of the most delicious toothpick appetizers around!

            Wondering how to cook sous vide pork belly in the oven? Here are the oven directions for Costco pork belly (from the package):

            Preheat the oven to 425F (218C). Place pork belly slices in a single layer on a rimmed metal baking pan.

              Bake until browned and internal temp is greater than 145F (63C) for 15 seconds. Use a meat thermometer to be sure.

                🤔 How to Cook Sliced Pork Belly (Stove)

                Wondering how to cook Costco pork belly on the stove? The Costco sous vide pork belly stovetop directions are on the packaging. If your packaging has damage, here they are:

                Heat a cast iron skillet to medium-high. Put pork belly slices in a single layer in the pan.

                  The box directions suggest adding a couple tablespoons of juices from the packaging to the pan while cooking. This is optional.

                    Sear pork belly in the pan on both sides until it reaches the safe temp of 145F (63C) for at least 15 seconds. Use a meat thermometer to check it. Watch it closely- it goes from crisp to burnt quite quickly!

                      🔥 Costco Pork Belly Strips Recipe (Grill)

                      You can also heat sous vide pork belly strips on the grill. Here are the directions for grilled pork belly from the Costco packaging:

                      Heat grill to medium-high. Put pork belly strips in a single layer on the grill.

                        When the edges begin browning, after about 2 minutes, flip the pork belly slices.

                          Cook pork belly until browned and internal temp is greater than 145F (63C) for 15 seconds. Use a meat thermometer to be sure.

                            Regardless of the type of Costco pork belly you choose, pork belly is a high fat and high calorie food. It should be thought of like bacon, more an added fat than a protein. One slice of pork belly gives you 252 calories from fat and only 52 calories from protein.
                            If you have a weight loss goal, I recommend thinking of pork belly as a small side or appetizer. Other foods, including lean proteins, non-starchy veggies, and slow carbs, should be the stars of your plate.
                            This will help bring the saturated fat in your meal down. Meanwhile, the filling protein, fiber, and fluid volume of the meal will go up. This may make it easier for you to feel full on fewer calories and maintain the calorie deficit needed for weight loss.
