Waxy potatoes have less starch and more moisture. They hold their shape well after cooking, and are better for roasted potatoes than baked. Waxy potatoes (like red potatoes) are also best for potato salad.
Baked sweet potatoes are tasty, but they contain a lot of sugars that tend to ooze and burn in the oven. So definitely go with russets if you want an easy baked potato.
The salt in this recipe helps to season the potato. In theory, it also helps extract moisture from the potato and crisp up the skin. No worries though if you’re on a low sodium diet; use garlic powder in place of salt and the potatoes turn out fine.

Though you could cook a potato at a super low temp in the oven, it’s not practical timewise for many of us. Additionally, you won’t get a crispy potato jacket like you would when the potato is baked at higher temps.

According to the USDA, leftover potatoes and potatoes in casseroles should reach a safe minimum internal temperature of 165F (74C). Remember that if you’re at a high elevation, your boiling point will not be 212F (100C). Otherwise, your potato should reach 210F (99C).

You can reheat baked potatoes in an air fryer set to 400F (200C) for 3-5 minutes. Alternatively, poke holes in the cooked cold potato with a fork and microwave on high for 1-2 minutes.
One more option is to reheat baked potato in the oven. To do this, preheat the oven to 425F (218C) and bake the potatoes 10-15 minutes until heated through.

Air Fryer baked potatoes take 35-45 minutes at 375F (190C). Rub oil on the potatoes before air frying, and do not wrap the potatoes in foil. Keep in mind that small air fryers take less time, and big potatoes take more.
If you’d like to make air fryer baked potatoes in foil, cook for 45-60 minutes at 375F.
🚨 Microwave Baked Potatoes
DO NOT microwave potatoes in foil! Foil is not safe in the microwave and using it in there may cause a fire. You can microwave baked potato without foil for 6-8 minutes. Make sure to prick the raw potato all over with a fork before microwaving.

If you’re using low carb or keto for weight loss or blood sugar control in diabetes, potatoes are not a good choice. On the other hand, remember that weight loss requires a calorie deficit. This can be achieved with both low carb and high carb diets. Plain potatoes were ranked as the most filling food in the Satiety Index. This means that you may find that eating plain baked potatoes helps you feel full on less calories. This may help you create the calorie deficit you need for weight loss. The resistant starch in potatoes may also be beneficial to weight loss. Admittedly, fries and baked potatoes loaded with high fat sour cream, bacon, etc. are generally not considered as filling.
