This is a no pan air fryer bread recipe. Aside from the air fryer, you’ll also need a sheet of parchment paper cut to the shape of the air fryer basket, plastic wrap, and a kitchen thermometer. You do not need a stand mixer or dough hook for this recipe.
I don’t recommend that you double the recipe. A small loaf is best to keep the outside from becoming burnt before the inside is done. This airfryer bread recipe serves about two and is a nice substitute for bread rolls at dinner.
➕ How to Air Fry Bread
Here are the step-by-step directions for making bread in air fryer:
Weigh the flour. Mix it with the yeast and salt in a medium-size mixing bowl.
Warm the water to 110-125F (43-51C). Add it to the dry ingredients. Knead or stir into a shaggy and cohesive ball of dough. Cover the bowl of dough with plastic wrap and let it rise in a warm room for 3 hours. The volume of the dough ball should increase.
Towards the end of the rising time, preheat the air fryer to 400F (200C) for 5 minutes.
Knead or fold the bread dough towards the middle about five times to make it round. You can sprinkle about 1 tablespoon of flour on your hands and the bowl to make this easier.
Carefully place a sheet of parchment paper cut to fit into the bottom of the hot air fryer basket or tray. Place the shaped dough round into the prepared basket. Cut a slash into the top and mist the dough with cooking oil spray.
Air fry the bread for 13-18 minutes at 400 degrees Fahrenheit (200C). (If cooking in an air fryer oven, place the loaf of bread in the middle.) The bread should reach an internal temperature of about 180F (82C). Leave the bread in the hot air fryer for an additional 3 minutes after the cooking time is up.
Allow the bread to cool for at least one hour before cutting and serving.
Large air fryer ovens tend to take longer to cook than small air fryers. If this easy air fryer bread isn’t cooking in the middle fast enough, cover it with foil to prevent more browning and air fry it longer.
How do you know when air fryer bread is done cooking?
The best way to know when yeast bread is done is to check the internal temperature with an instant read thermometer. Bread is usually done when it reaches an internal temp of 190-210F (88-99C). This air fryer no knead bread should reach around 180F (82C) after baking, as it will continue cooking as it sits in the hot air fryer.
💡 Air Fryer Bread Tips
- Wrap fresh bread in plastic wrap and store in the fridge for up to 1-2 days. For longer term storage, place the bread in a freezer bag with the air pressed out and store in the freezer.
- Weigh the flour. Using volume measurements for the dry ingredients in baking recipes can lead to inconsistent results.
- Make sure the water is the right temperature. If it is too hot, it will kill the yeast. If it is too cold, the bread may not rise.
- The dough must rise in a warm room at around 70F (21C). Do not place the dough in the refrigerator to rise.
- To make bread that is airy with bigger holes like sourdough (i.e., less dense), the dough needs more moisture. The main issue is that it doesn’t shape into a neat loaf and requires a pan to form a round shape.
Here is what the dough looked like when I experimented with making a bread with larger holes by adding a little more water:
The loaf formed from this wasn’t crusty and photogenic. However, it did make a nice holey bread that I could cut into thin slices.
Whole wheat flour gives you a little more fiber but makes a very dense bread, so I don’t recommend it. If you want to make a “healthier” loaf, I’d experiment with using 1 part whole wheat flour to 3 parts all-purpose flour. If you’re satisfied with the results, you can increase the whole grain flour and decrease the plain flour even more.

💭 Expert Tips from Dietitian Summer Yule
This is a level 3 recipe (weight maintenance and active lifestyles). White bread is a calorie-dense food that lacks the protein, fiber, and fluid volume that helps us feel full on fewer calories. One of the reasons low carb diets help some people lose weight is that these diets eliminate a lot of the foods that are easy to overeat. That said, homemade bread is the ultimate comfort food, and typically provides some B-complex vitamins and iron through enrichment of the flour. I know I enjoy treating myself to some golden brown freshly baked homemade bread on occasion. If you feel the same, I hope you love this recipe, and that it turns out delicious and perfect for you 🙂 Nutrition information is for one serving.

Can you cook it in the oven?
Hi Ella! I haven’t tried but I don’t see why not! It will likely need a longer cooking time.
