🍚 Pork Belly Fried Rice
Here are the ingredients you need to make pork belly and rice:
- 8 ounces cooked pork belly, chopped (227 grams)
- 4 cups cooked rice (chilled; equals about 1½ cup dry rice)
- 3 cloves garlic (minced)
- 1/3 cup scallions, sliced (use white and green parts)
- 1 cup frozen peas and carrots (thawed)
- ¼ cup reduced sodium soy sauce
- 1 tablespoon honey
- ¼ teaspoon cayenne pepper (optional)
- Black pepper, to taste
- 2 large eggs
- 1 teaspoon toasted sesame oil
Use leftover diced pork belly for this recipe. Alternatively, both Trader Joe’s and Costco sell fully cooked pork belly that works perfectly in this recipe. (Learn more: Costco pork belly)
Jasmine rice, basmati rice, white rice, brown rice, or whatever day-old rice you have should work in this recipe. I used white basmati rice.
How to Make Pork Belly Fried Rice
Here are step-by-step instructions to make this pork belly rice recipe:
- Heat the diced pork belly in a wok or skillet over medium-high heat on the stovetop for 5-10 minutes. The pork belly should release oil. Add oil to the pan if it doesn’t release about 3 tablespoons. Add the garlic to the wok during the last minute of cooking the pork belly.
- Add the rest of the ingredients to the wok EXCEPT the eggs, sesame oil, and scallion greens. Cook the Asian pork fried rice over medium-high for 6 minutes, stirring often.
- Whisk the eggs then add them to the wok. Stir and cook them until set. Remove the pork belly fried rice from the heat, finish with the toasted sesame oil, and garnish with the green onions. Serve immediately and enjoy.
