Seafood delight is basically a baked imitation crab dish with a creamy base. Serve this seafood bake from the 70s as a crab dip with crackers, or spread it on English muffins. Another variation- the seafood delight Chinese buffet dish, is a recipe of seafood stir fried with veggies. - Preheat the oven to 400 degrees Fahrenheit (200C). Break or chop the crab chunks into smaller pieces. Thinly slice the scallion.
- Stir the crabmeat, mayo, lemon juice, scallion greens, salt, and pepper together in a medium-sized bowl. Divide the mixture between four small ramekins that are oven safe.
- Divide the shredded mozzarella cheese evenly over the top of each ramekin.
- Bake for 7-10 minutes on an oven rack 1/3 down from the top of the oven. To serve, you can garnish with more sliced scallions and serve with crackers or crostini. Enjoy!
Hot tips! Mayo contains a lot of oil, so there’s no need to use cooking oil spray on the ramekins. This dip is delicious served warm or enjoy cold. (It tastes like the seafood salad filling at sub shops when chilled.)
