    • ½ teaspoon salt
    • ½ teaspoon onion powder
    • 2 teaspoons smoked paprika
    • ½ teaspoon black pepper
    • 1 teaspoon garlic powder
    • ½ teaspoon dried oregano
    • ½ teaspoon dried thyme
    • 1 tablespoon oil (I used olive oil)
    • 1 medium onion
    • 2 scallions
    • 8 ounces mushrooms (227g)
    • 2 tablespoons butter
    • 1 ½ tablespoons flour
    • 1¼ cup reduced sodium chicken broth
    • ½ cup sour cream (use full fat sour cream; my test using light sour cream didn’t turn out as good)

    You’ll also need a cast iron Dutch oven or skillet, paper towels, good knife, and meat thermometer for this recipe. Make sure dutch oven is seasoned well to minimize sticking. A meat thermometer is the best way to tell whether pork chops are done, not whether the chops are pink or not.

    Using a thin pork chop as I did is important to keep the cook time down. Making Dutch Oven boneless pork chops saves you time, since they cook faster than bone-in pork chops. They are also easier to cook without drying out, since thin boneless chops cook fairly evenly.

    You don’t need to do anything fussy in this recipe to get tender pork chops, such as soaking the pork chops in milk. We’re going to get homemade juicy pork chops on the dinner table fast tonight.

Check the chops with a meat thermometer to ensure they reach a minimum safe internal temperature of 145F (63C). Remove the pork chops from the pan and set aside.
    1. Halve and thinly slice the onion, rinse and slice the mushrooms, and thinly slice the scallions. Melt the butter in the cast iron Dutch oven over medium-high heat. Add the onion, mushrooms, and white parts of the scallion. Cook until softened and a little brown (about 5-10 minutes).
    1. Add the flour to the Dutch oven and stir for about 1 minute. Then whisk in the chicken stock. Bring the mixture to a simmer and whisk until thickened (1-2 minutes). Remove from heat and stir in the sour cream to make creamy sauce. Season with more salt and pepper (if desired).
    1. Return the pork chops and their juices to the Dutch oven. Garnish with the sliced scallion greens and serve. Enjoy!
