What is a pork butt? The Boston butt or pork butt is the piece of the pork shoulder above the picnic ham (AKA arm roast). You can get bone in pork butt that includes the blade bone, or boneless lean butt.
Why is it called Boston butt?
There are several theories online concerning the origin of the name “Boston butt.” According to Southern Living, the name Boston butt comes from the colonial era. This cut of pork, considered a New England (or Boston) specialty, was shipped in barrels called “butts” to other areas.
Wikipedia suggests that Boston butt gets its name from its place as a cut from the wide end of the shoulder. Butt is an Old English term for wide end.
Either way, the one thing we do know is that Boston butt doesn’t get its name from where the cut was taken. Boston butt comes from the front of the animal, not the rear end of the pig (or pig butt).

Pork butt is simply another name for Boston butt.
Does Boston butt have a bone?
You can buy boneless Boston butt pork roast or bone-in Boston butt. Your choice!
Is Boston butt beef or pork?
Boston butt is a cut of pork. Chuck roast is the best beef substitute for pork shoulder, IMVHO. It shreds well and also comes from the shoulder of the animal.
🍖 How to Cook a Boston Butt
How long does it take to cook a Boston butt? Boston butt in the oven takes about 1 hour per pound at 350. You can make a small roast pork butt in the oven in about 2 hours.
Here are the step-by-step instructions for how to cook pork butt (ingredient measurements are below):
Preheat the oven to 350 degrees Fahrenheit (177C).
In a small bowl, mix brown sugar, chili powder, paprika, garlic powder, onion powder, dried thyme, salt, and pepper. Rub this dry rub on all sides of the Boston butt.
Spray a small, enameled Dutch oven with cooking spray. Place the pork in the pot.
Bake uncovered at 350F for two hours, flipping every 45 minutes. Use a rack about ½ way down in the oven.
Check the internal temp with a meat thermometer. Pork roasts should reach a safe minimum internal temperature of 145F (63C). Add additional cooking time if needed.
When done cooking, tent the Boston butt in aluminum foil and let it rest 10-15 minutes before slicing and serving.

- 1½ teaspoons brown sugar (or Swerve for keto)
- ½ teaspoon chili powder
- ¼ teaspoon dried thyme
- ½ teaspoon paprika (used smoked paprika for extra flavor)
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Cooking oil spray
- Salt and black pepper, to taste
You’ll also need a small enameled cast iron Dutch oven, aluminum foil, and a meat thermometer.

You can find Boston butt for sale at most major grocery stores in the US. I bought this pork butt at Thrive Market, but you can also get it at US Wellness Meats here, or on Amazon.
The Boston butt price per pound can vary from under $2 to over $10. For the best prices, check your local warehouse clubs like Costco and Sam’s. At the time of writing, Sam’s club has bone-in pork Boston butt for $1.98 per pound.

According to the USDA, uncooked Boston butt should be cooked to a minimum internal temp of at least 145F (63C). After cooking, the pork roast should rest for at least 3 minutes before slicing and serving.

Any leftover Boston butt that won’t be used in 3-4 days should be moved from refrigerator to freezer. Boston butt freezes and reheats beautifully. To freeze, store leftovers in vacuum-sealed bags or freezer bags with the air pressed out.

Hi Eric! I would defrost it first. The air fryer isn’t the best at cooking roasts from frozen.
How long should an 8 lb pork shoulder cook?

It says you need a Dutch oven with lid but you never use the lid. Should it say cook “covered” for 2 hours…?
