I don’t typically have a lot of time to prep meals mid-day. Because of this, you’ll find a lot of overlap between these lunch recipes and my meal prep recipes. I find it easiest to prep lunches in the evening and be all set for the next few days.
Leftovers aren’t supposed to sit around in the fridge for more than 3-4 days. That’s why so many of my lunch recipes are for four servings. I often prep four salads for weekdays and have dinner leftovers for lunch on the other days of the week.
Salads are pretty much my favorite thing to have for lunch, so you’ll find lots of salads here! I use All in One Salad To-Go Containers for my salad preps (affiliate link). These generously-sized containers come with a lidded container for dressing and a separate compartment for crunchy toppings.

If you don’t like salads prepped a few days ahead because they can get slightly soggy, no worries. Head over to the dinner recipes and pick a soup or stew to make for lunch instead.
